Cooking at home during quarantine has taken a toll on me, so I can't imagine that it hasn't on you either. I feel like I'm constantly running out of things to make, and eating healthy seems like the last thing I want to do 😫
So I wanted to share with you this recipe: Curry tofu stir fry + cauliflower rice with turmeric crush!
Cauliflower rice has been a staple for me throughout my quarantine diet; it takes less than 15 minutes to make, and it's so yummy and easy to make.
Not to mention healthy: cauliflower rice is great for you because it is low in carbs and calories yet still super filling. It has only 3 grams of net carbs per cup (18 times fewer carbs than the same quantity of rice) and 25 calories per cup (~10-20% of the calories from the same quantity of cooked rice). I then caramelized the tofu with the turmeric crush in a little bit of organic oil!
